Barrett Hill Baharat Chicken Pitas

Cut each thigh into strips and place in a bowl. Combine Barrett Hill Baharat Blend, olive oil and a squeeze of the lemon in a separate container. Mix well and pour on top of chicken. Mix well and leave to marinate in the fridge for at least one hour before cooking. Thread the meat onto metal or wooden skewers (if using wood, soak skewers before in water). If grilling, grill for approximately 20-25 minutes or until golden in color and cooked all the way through. Be sure to turn skewers often for even cooking. If cooking in the oven, heat to 375 F. Sear the skewers in a hot frying pan, then transfer to the oven. Roast until golden and cooked (about 15-18 mins). Rest for 5 mins and squeeze with lemon juice. Serve chicken in pita pockets with cilantro, yogurt, and salad greens. |
