Cilantro Lime Rice
Toast rice in olive oil over medium high heat. Keep stirring until rice is milky white and beginning to brown.
Add garlic and continue stirring until rice is half browned.
Add water (pan will be very hot, be careful of steam and spattering).
Add bay leaves.
Once water begins to boil turn heat down to low, cover and cook 10-12 minutes without lifting the lid.
Turn off burner and allow to stand 10 minutes without lifting lid.
After ten minutes remove bay leaves, fluff rice, and add the remaining ingredients.
Toss and cover again approx 5 minutes until ready to serve.
