Rosemary is the dried needle-like leaves of the evergreen herb Rosmarinus officinalis, a member of the mint family. It has a pungent herbal flavor and pine-like aroma. It is very popular in Mediterranean cuisine. It works exceptionally well in marinades for meat and poultry because of both its flavor and it’s antioxidant compound that help fight bacteria and prevent meat from spoiling. Rosemary also works well in breads, pasta, squash, stuffing, potatoes and soups.
