The dried leaves of the perennial herb Artemisia dracunculus, a member of the daisy and sunflower family. It has delicate liquorice like flavor that heating will intensify. Tarragon is one of the four Fines Herbes of French cooking, and is particularly suitable for chicken, fish and egg dishes. It is the main flavoring component of Béarnaise sauce.
