White Peppercorns are the ground unripe seeds, with the fruit removed, of the Piper nigrum, a flowering vine in the pepper family. It has more heat but a less complex flavor than black pepper. It is sometimes used in Chinese cooking or in dishes like salad, light-colored sauces or mashed potatoes where black pepper would visibly stand out.
