The bark of the evergreen Cinnamomum cassia tree, in the Laurel Family. They have a sweet, warm, earthy flavor and aroma. It is an essential ingredient in many baked goods and desserts such as pies and pastriesas well as a wide variety of savory foods. It shows up often in Indian, Middle Eastern and Persian Cuisine. The sticks can be used to impart flavor by griding or submerging and then removing from a dish after cooking. They are also often used as decoration, in potpourris and as a garnish or stirrer in drinks such as chai, eggnog, cocoa and mulled cider.
