Arrowroot is a powdered starch made from the rootstock of the tropical herb Maranta arundinacea. It is used as a thickener in a wide variety of applications including, jellies and sauces. The lack of gluten in arrowroot flour makes it useful as a replacement for wheat flour in baking. It can be used to prevent ice crystals from forming in homemade ice cream and is is more ideal than corn starch because it doesn’t cloud, and thickens at a lower temperature.
