The cones from the Juniperus communis tree, a member of the cypress family. They have a fresh, pine like flavor with citrus notes. They are used commonly in European and Scandinavian cuisine. They can be used to add flavor to game meats and birds, as well as pork, cabbage and sauerkraut dishes. Juniper provides the main flavor in the alcohol gin.
